Artichoke & Spinach Dip

This, to me, is the ultimate comfort food.  When I want to feel comfort, I want food that reminds me of Canada.  And, damn, do we do dips well.  We like to head to a sports bar, with the sound on, pints of beer, and warm, high fat foods…

Oh Canada.

For the Glutton RECIPE


  • 1 8oz pkg cream cheese, softened
  • 4 artichoke hearts, roughly chopped
  • 2 cups roughly chopped spinach
  • 2 cloves garlic, minced
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup shredded aged cheddar
  • 2 tbsp mayo
  • 2 tbsp sour cream
  • Salt & Pepper



Preheat oven to 375F/170C.  Blend cream cheese, cheeses, mayo, sour cream, garlic, and salt & pepper until well mixed.  Stir in spinach and artichoke.  Sprinkle top with parmesan cheese and bake for 20 minutes, or until dip starts bubbling.  Remove from oven and allow to cool for 5-10 minutes.  Serve with baguette, nacho chips, vegetables, whatever floats your boat.
