Buttermilk Pancakes

I’ve shared this recipe on Instagram twice now, as these fluffy edible pillows of love come out perfect every time, and I normally seem to pancake challenged! As it’s a pain in the butt trying to follow a recipe on that medium, I thought I’d add it here for you ❤️

Buttermilk Pancakes

Serves 2-3
Ingredients:

1 1/4 cup buttermilk

1 egg

1 cup self raising flour

3 tbsp melted butter

1 tsp baking soda

2 tsp baking powder

2 tsp vanilla

1 tbsp sugar

pinch salt
Instructions: Combine ingredients in a medium sized bowl (don’t worry about small lumps, better to under mix), lightly grease pan over medium heat, measure 1/3 cup rounds of dough. Cook until the top of the pancake begins to bubble, then flip. Serve with butter & maple syrup. Voila!
