Crab Mac & Cheese

Crab Mac & Cheese
The hangover wants what the hangover wants! And, yesterday that was melted Brie, onions, cream, pasta, and crab!

Crab Mac and cheese (serves 3-4)

  • 4 tbsp butter, divided 
  • 2 cloves garlic, minced
  • 1/2 brown onion, finely chopped
  • 125g Brie 
  • 1 cup Parmesan
  • 1/2 cup mild cheddar
  • 1/3 cup chives
  • Sprig fresh parsley
  • 1 can crab meat, drained
  • 4 serves macaroni pasta
  • 1/2 cup milk
  • 1/2 cup cream
  • 2 tbsp flour
  • Salt & pepper 


Melt 2 tbsp butter in medium saucepan over medium heat. Cook onions until they soften and just begin to brown a touch. Set aside. 

Cook pasta until just barely al dante (will continue to cook), drain, reserving 1 tbsp pasta water in pot with pasta. Stir in onion. Stir in Brie, cheddar and half of Parmesan. 

Melt 1 tbsp in pan used for onion, throw in garlic, cook until it becomes soft and fragrant. Remove from heat, stir in crab meat to warm. Set aside 

Melt remaining butter, add flour to create a roux. Slowly whisk in milk. Whisk in cream. Whisk in remaining Parmesan. Season. 


Stir white sauce into pasta over low heat. Stir in chives. Plate. Put crab on top of pasta. Garnish with parsley.
