Thai Red Curry Prawn Soup

I’ve been home sick all week, and it turns out I have strep throat! Since I’m in a new city, I had to make soup for myself.  I’ve kind of overdone the whole chicken soup thing… so I went this route!  I added doubled the garlic and ginger I’ve included in the recipe, as I can’t taste anything…



1 tbsp olive oil
2 tsp sesame oil
1/4 cup fish sauce
2 tsp minced garlic
2 tsp ginger
2 tbsp red curry paste
.25kg raw, peeled prawns
1 green pepper, sliced & chopped
2 cans coconut milk
4 cups vegetable broth
1 cup bean sprouts
1 birds eye Chili, chopped
2 tbsp brown sugar
1 lime, half used for juice, half used for garnish
1 tbsp lemon juice
Bunch fresh Thai basil, torn
Fresh coriander
200g thin rice noodles

Heat olive oil, sesame oil, add garlic, Chili, ginger and curry paste until fragrant. Remove from heat. Slowly stir in coconut milk. Return to hear. Slowly stir in stock. Whisk in brown sugar, lime & lemon juice, and fish sauce. Simmer 5 min.
Stir in veg, basil, some coriander, and prawns. As soon as prawns begin to turn pink, remove from heat.
Prepare noodles as per package. Plate & garnish with remaining coriander. See? Easy.
