Easy Prawn Ceviche

Normally, prawn Ceviche is meant to marinade in lime juice for 4 hours. Ain’t nobody got time for that! Read below for my abbreviated version (don’t worry, the flavour didn’t suffer. My ceviche was the only thing at the BBQ to be eaten in its entirety). 

Ingredients:

  • .5kg raw prawns, shell on
  • Juice from two fresh limes 
  • Two tomatoes, diced
  • Bunch fresh coriander
  • 1 whole avocado, diced
  • Salt
  • Pinch sugar*
  • Bag of tortilla chips

Method:

Place prawns into boiling pot of water for 2.5 minutes, make sure you stir. Quickly remove from pot and place in ice bath. Remove shells and de-poop. Rinse and chop into thumb nail sized pieces. Place in a large bowl with the lime juice. Add tomatoes, salt, sugar, and coriander. I allowed this to sit for about half an hour- an hour.  


Literally seconds before serving, add the avo. I didn’t heed this advice myself, and ended up having to drawn most of the beautiful lime juice bc it had turned a disgusting, muddy colour. 

Serve with chips!

*Whenever making anything with tomatoes, add a pinch of sugar. It balanced out the acidity.
