Salted Caramel Sauce

Salted Caramel Sauce

It’s about time I list this recipe on it’s own.  It’s great for soooo many dessert recipes (or to eat by the spoon).  Added bonus: no candy thermometer needed.


  • 3/4 cup caster sugar
  • 1/3 cup water
  • 1/2 cup brown sugar
  • 150 ml thickened cream
  • 1 tsp sea salt


Combine water and sugar over medium heat in medium saucepan. Stir until sugar completely absorbed. Simmer without stirring for ten minutes.  Mixture with bubble and froth, this is completely normal.


Remove from heat.  Stir in salt.  Stir in cream.  Return to heat.  Cook for an additional 2 minutes, or until smooth.  Cool.  Taste while warm.  Feel free to add more salt. Serve at room temp
